This hummus and red pepper combo on top of our Soft Seeded Bagel Thins makes for the perfect meat-free lunch.

  • 2 New York Bakery Co. Soft Seeded Bagel Thins
  • 1 Red Pepper, Deseeded & Sliced (see tip)
  • 2 tsp Olive Oil
  • 100g Hummus
  • Large Handful of Spinach Leaves

Preheat the oven to 200C/fan 180C/gas mark 6.

Toss the pepper slices with the olive oil, place in a roasting tin and cook for 20-25 minutes.

Top your bagel with the hummus, peppers and spinach.

Sandwich on the lid and enjoy immediately or wrap up for lunch.

Tip: Make it quicker by using 50g each ready roasted peppers, sliced, from a jar.
