Ingredients

  • 2 New York Bakery Co Bagel Sandwich Thins
  • 4 tsp. green pesto
  • 2 medium tomatoes, sliced
  • A couple of sprigs of basil
  • 1 ball of buffalo mozzarella, sliced
  • A drizzle of olive oil
  • Black pepper, to taste
  • Two small handfuls of rocket

Method

  1. Toast the bagel halves until lightly golden.

  2. Top the toasted bagel halves with the pesto, then layer over the tomato slices, basil and mozzarella.

  3. Finish with black pepper, a drizzle of olive oil and a handful of rocket.
