  • 1 Red Onion and Chive New York Bakery Co Bagel
  • Half an avocado
  • A splash of white wine vinegar
  • 1 egg
  • 3 tbsp. prepared Hollandaise sauce
  • 2 slices of smoked ham
  • A pinch of smoked paprika
  • 1 tbsp. finely chopped chives


  1. Thinly slice the avocado.

  2. Bring a small saucepan of water to the boil, add in the white wine vinegar, and poach the egg until cooked to your liking.

  3. Heat your Hollandaise through until warm.

  4. Toast the bagel and top with the ham, sliced avocado and poached egg.

  5. Finish by pouring the Hollandaise over the poached egg and sprinkling with the smoked paprika and chives to serve.
