Ingredients

  • 1 New York Bakery Co. Cheese Bagel
  • Plenty of butter
  • 4 slices Parma ham
  • 2 small eggs
  • 1 avocado
  • ½ lime
  • Sriracha chilli sauce

Bagel Build

  1. Heat your oven to 180°C.

  2. Toast your bagels and schmear on plenty of butter.

  3. Add the bagel halves to a baking tray and cut each one down the middle.

  4. Line the holes with 2 slices of Parma ham, pulling the bagel pieces apart a little to make room for the ham.

  5. Crack an egg into each ham-lined hole and bake until cooked to your liking, about 8-10 minutes.

  6. Mash the avocado with the lime juice and some salt and pepper.

  7. Serve the bagels with some avocado on the side and some Sriracha if you like things spicy.
