Fry the mushrooms with some oil until golden, then drop the
spinach in and cook until wilted.
Crack two eggs in the pan with the rest of the oil and cook
to your liking.
Toss half the fillings in each toasted bagel and top with
some parsley (if you fancy), then take a big bite.
