THE POWER BRUNCH
A high-protein, feel-good breakfast. Soft scrambled eggs, creamy cottage cheese and fresh avocado layered on a golden Protein Boost Bagel for balanced fuel without compromise.
Ingredients
- 1 New York Bakery Protein Boost Bagel, halved
- 1 large egg
- 2 tbsp Philadelphia Protein Cottage Cheese
- ½ avocado, sliced
- Chilli flakes, to taste
- Fresh chives, finely chopped
- Spring onions, finely sliced
Method
- Slice the protein bagel in half and toast until lightly golden and crisp.
- Crack the egg into a bowl and lightly whisk. Cook gently in a non-stick pan over a low-medium heat, stirring slowly until softly scrambled. Season lightly, if desired.
- Spread the cottage cheese evenly over both toasted bagel halves, then spoon the scrambled egg on top. Layer over the avocado slices.
- Finish with a sprinkle of chilli flakes, followed by chives and spring onions, and serve immediately while warm.
