A high-protein, feel-good breakfast. Soft scrambled eggs, creamy cottage cheese and fresh avocado layered on a golden Protein Boost Bagel for balanced fuel without compromise.

The Power Brunch

Ingredients

  • 1 New York Bakery Protein Boost Bagel, halved
  • 1 large egg
  • 2 tbsp Philadelphia Protein Cottage Cheese
  • ½ avocado, sliced
  • Chilli flakes, to taste
  • Fresh chives, finely chopped
  • Spring onions, finely sliced

Method

  • Slice the protein bagel in half and toast until lightly golden and crisp.
  • Crack the egg into a bowl and lightly whisk. Cook gently in a non-stick pan over a low-medium heat, stirring slowly until softly scrambled. Season lightly, if desired.
  • Spread the cottage cheese evenly over both toasted bagel halves, then spoon the scrambled egg on top. Layer over the avocado slices.
  • Finish with a sprinkle of chilli flakes, followed by chives and spring onions, and serve immediately while warm.
